The home stretch...

Only 5 more days until the end of my eating from the pantry challenge, which also means only 5 more days till vacation!!!

Last week, I made a batch of zucchini muffins as intended and they definetely spruced up our breakfast and brought much joy to the kids. So for two days we had them with scrambled eggs. On Saturday more eggs but this time with toast and on Sunday some hashbrowns, and you guessed it! More eggs!
For lunch we stuck with sandwiches and for dinners we had Arroz Relleno , tilapia with cilantroed potatoes , salad and pizza (not all at once of course). We ate out one time during the weekend and by Sunday night/Monday morning choices were scarce, which meant cereal for breakfast. Yesterday I made my last trip to the store (hopefully) and got more eggs, milk, apples, bananas, lettuce and some yogurt.

Yesterday for lunch we had chicken nuggets and smoothies and for dinner pork chops (no more left), rice and beans. Since I am basically out of meat, today I went for a pasta salad in which I used most of the veggies I had left...

So I have five days left and the following items:

In the fridge: one bag of lettuce , one red pepper, one zucchini, one Italian squash, one onion, one tomato, carrots, fours lemons, four potatoes, four avocados, 5 apples, 5 bananas, almost two gallons of milk, two cups of yogurth some cottage cheese, 4 slices of bread, some tortillas and some turkey and condiments. In the freezer: four tilapia filets, one lb. of shrimp, one pork loin, some chicken nuggets, 1/2 bag of frozen peas, half bag of frozen spinach and in the pantry couple cans of tuna, some pasta and and mac n cheese, peanut butter and a few snacks like gold fish, pretzels and crackers. Can I feed 6 people for the next 5 days? I think so! Praise God for a well stocked pantry...

cristina - i have thoroughly enjoyed reading your pantry challenge - makes me think about what I have to use up in my pantry. hope you guys have a great vacation!

I love being able to create meals from things I already have...it reminds me of Mike's mom's stories of growing up & how her mom did that all the time...made something out of nothing! great practice to get into!
