The challenge continues

Well, I must admit I having more fun with this than anticipated... As I posted on Monday, my fridge was almost empty but I still managed to put together a couple more meals before hitting Fresh and Easy today to get some staples.

Breakfast has been pretty plain, consisting of just cereal and a piece of toast for my growing boys. Today though, I pulled the last package of English muffins from the freezer and we had them with cream cheese and jam.

The big salad turned out pretty nice on Monday night but I used the last of my chicken. Last night we had Ropa Vieja, moros and patacones for dinner (shredded pork, black beans and rice and fried plantains, also known as tostones in Cuba). Lunches have remained in the turkey and cheese sandwich realm and today chicken nuggets... luckily I still have a few of those left for an emergency!

So today I got fruit, veggies and milk and for dinner we will have Mike's favorite pasta. I had all the ingredients at hand, except for chicken. Since I cannot buy chicken, as per my own stipulations, I am replacing it with mushrooms... Mike is so sweet.. last night he said: - you are doing such a good job with your challenge, I have not even noticed that you have not been doing any shopping.... ah, music to my ears!

Here is to a skinny pantry and 11 days more to go!

Oh, I almost forgot.. today I got some zucchinis so tonight I am going to make zucchini muffins and that should spruce up breakfast for a couple days... Bonn Appetite.

Wow, I am so impressed. We aren't going out of town anytime soon, but it couldn't hurt to do some serious clean out around here, and save some money and trips to the store.

Thank you... it has been fun. while doing this challenge I found one item from 2003 in the pantry and two pieces of meat from two years ago... once I am done, I will do a serious cleaning of my fridge and leave it ready to be stocked up again when we come back.
