Our pantry challenge has been smooth sailing. Yesterday I went to the store to grab some apples, bananas, grapes, milk and also some ricotta cheese, which was the only thing missing for a lasagna.
This past couple days we had egg sandwiches, bagels and cream cheese, oatmeal, turkey or PB&J sandwiches for lunch and home-made pizza. Tonight lasagna and I gotta figure out how to use some sweet potatoes and an Italian squash that came with the BB basket. Any ideas?

sweet potatoes are good no matter what you do with them - I like them roasted in the oven - but I have heard that you can slice them really thin and layer them with your cheeses and stuff (in place of noodles) for a veggie lasagna - or wait? did you just have lasagna? cool challenge - wish I could do that - my husband would not be thrilled with the idea :)
We love to make sweet potato fries! With the squash I usually slice it thin (in spears) then cook it in a frying pan with a little olive oil, salt & pepper then sprinkle with parm cheese before serving.
Thank you guys... I ended making sweet potato casserole today, because I also had some frozen green beans and a whole chicken... so I pretended it was Thanksgiving all over again... when Mike saw it he looked at me with a "you've gone mad woman! kinda face... Melissa, I'll have to try the squash like that... more to come.
